Laura's Breakfast on the Run

  • 2 Tbs. plus 2 tsp. apple butter
  • 1 Tbs. plus 1 tsp. Dijon mustard
  • 2 English muffins, split and lightly toasted
  • 1/4 lb. cooked ham, chopped
  • 1 Tbs. plus 1 tsp. scallions
  • 2 ounces shredded fat-free cheddar cheese

Turn on broiler. Combine apple butter and mustard in a bowl and mix thoroughly. Spread 1 tsp. mixture over each muffin half. Combine remaining ingredients in another bowl and divide between muffin halves. Broil 1-2 minutes until topping is bubbly.

Simple Pineapple and Bananas

  • 2 cups pineapple chunks
  • 2 bananas, sliced

Combine pineapple chunks and bananas in a bowl and serve.

Cinnamon Coffee
Prep: 10 min, Cook: 15 min, plus chilling time.
  • 1/2 cup whipping cream, chilled
  • 1 Tbs. sugar
  • 1/4 tsp. vanilla extract
  • 1/2 cup ground coffee
  • 1 tsp. cinnamon
  • 4-1/2 cups water
  • 1/4 cup Kahlua or other coffee liqueur (optional)

Combine first 3 ingredients in a bowl. Beat to soft peaks. Chill until ready to serve. Combine ground coffee with cinnamon and brew by desired means. Serve coffee with Kahlua, if desired, and topped with whipped cream.
