Roast Beef Sandwiches with Pickles
Prep: 10 min.
  • 8 slices rye bread
  • 1/4 cup prepared horseradish
  • 3/4 lb. cooked roast beef, thinly sliced
  • 1/2 cup ketchup or barbecue sauce
  • 4 lettuce leaves
  • 4 dill pickle wedges

Spread horseradish over one side of each slice of bread. Divide sliced roast beef between half the bread slices and top with ketchup, lettuce and remaining bread slices. Cut in half diagonally and serve with dill pickle.

Greek Salad

  • 1-1/3 cups spinach leaves, washed and torn into pieces, tough stems discarded
  • 1/2 lb. european salad (or other packaged salad mix)
  • 1-1/4 tomatoes, cut into wedges
  • 3/4 cucumber, peeled and thinly sliced
  • 3/4 red bell pepper, seeded and thinly sliced
  • 3 ounces pitted black olives, thinly sliced
  • 3 ounces feta cheese, crumbled
  • 1/2 cup salad dressing
  • 2/3 cup plus 3 Tbs. cheese & garlic croutons

Combine first 7 ingredients in a salad bowl and toss. Pour dressing over salad just before serving. Season with salt and pepper to taste and toss. Serve with croutons.

Strawberry Freeze

  • 1-1/4 lbs. frozen unsweetened strawberries
  • 1 cup strawberry lowfat yogurt
  • 3 Tbs. confectioner's sugar
  • 1/2 tsp. vanilla extract

Place frozen strawberries in a food processor. Process until berries are very fine. Add remaining ingredients and process until smooth.
