Lower Fat Grilled Tuna with Capers
Prep: 5 min, Cook: 15 min.
  • 2 tsp. unsalted butter
  • 1/4 cup low calorie mayonnaise
  • 2 Tbs. sun dry tomatoes, minced
  • 1 Tbs. capers, rinsed and drained
  • 4 tuna steaks, about 1/2 lb. each

Prepare grill or broiler. Combine butter, mayonnaise and sun dry tomatoes in a heavy saucepan over low heat. Simmer 10 minutes, stirring frequently. Remove from heat. Stir in capers and keep warm. Season tuna with pepper to taste and broil 4-5 minutes per side or until lightly browned. Serve tuna topped with sauce.

  • 1 lb. garden salad
  • 1/2 cup jicama, peeled and shredded
  • 1/2 cup radishes, trimmed and sliced
  • 1/2 cucumber, peeled and thinly sliced
  • 1/2 cup light Italian dressing
  • 1 cup cheese & garlic croutons

Combine all ingredients, except croutons, in a bowl. Toss. Season with salt and pepper to taste. Serve with croutons.

  • 1 cup red seedless grapes
  • 1/2 cup plain yogurt
  • 3 Tbs. honey

Combine all ingredients in a mixing bowl and mix thoroughly. Let stand 15-20 minutes before serving.
