Mexican Pizza with Fat-Free Cheese
Prep: 5 min, Cook: 10 min.
  • 1 baked cheese pizza crust
  • 2 tsp. olive oil
  • 1 cup salsa, drained
  • 1/4 lb. canned green chilies, chopped
  • 2 Tbs. cilantro, chopped
  • 1/2 lb. smoked turkey, chopped
  • 1-1/2 cups fat-free Monterey Jack cheese, shredded

Preheat oven to 450°F. Place pizza crust on a baking sheet and brush with oil. Spread salsa over top and sprinkle with remaining ingredients. Bake 10-12 minutes, until cheese is melted and crust is golden.

Beet and Apple Salad
Prep: 10 min.
  • 4 small beets, peeled and thinly sliced
  • 2 Golden Delicious or Jonathan apples, cored and thinly sliced
  • 1 cup plain nonfat yogurt
  • 1 tsp. sugar
  • 3 Tbs. lemon juice
  • 3 Tbs. mayonnaise
  • 1 scallion, chopped

Combine beets and apples in a bowl. Combine remaining ingredients, except scallions, in another bowl. Season with salt and pepper to taste. Pour dressing over beets and apples and toss. Serve sprinkled with chopped scallion.

Farina Pudding with Fruit Cocktail
Prep: 10 min, Cook: 5 min, plus chilling time.
  • 1 cup skim milk
  • 2 Tbs. farina, uncooked
  • 2 Tbs. honey
  • 1 large egg, lightly beaten
  • 1/4 tsp. vanilla extract
  • 1/2 lb. canned fruit cocktail
  • plastic wrap

Combine first 3 ingredients and a pinch of salt in a saucepan over medium high heat. Simmer 3 minutes, stirring constantly. Place eggs in a bowl. Stir about 1/4 of the farina mixture into beaten eggs. Stir egg mixture into remaining farina mixture and cook, stirring, until pudding just begins to boil. Remove pan from heat and stir in vanilla. Place pan in a bowl of ice water and stir about 5 minutes to cool. Divide between 4 small dessert bowls. Cover surface of pudding with plastic wrap to prevent a skin from forming and chill until ready to serve. Serve fruit over pudding.
