Sloppy Joes
Prep: 5 min, Cook: 10 min.
  • 1 lb. ground beef
  • 1-1/2 cups chilli sauce
  • 2 Tbs. brown sugar
  • 4 Kaiser rolls, lightly toasted, split
  • dill spear

Cook beef 5-8 minutes in a heavy nonstick skillet over medium-high heat, stirring frequently to break up meat, until browned. Stir in chilli sauce and brown sugar. Season with salt and pepper to taste. Cook 2 minutes or until heated through. Spoon onto rolls and serve with pickles.

Fresh Pineapple Fruit Salad
Prep: 10 min, plus chilling time.
  • 1 whole pineapple
  • 1 papaya, peeled, seeded, cut into chunks
  • 1/4 lb. seedless grapes
  • 1 apple, peeled cored and cut into chunks
  • 1/4 cup pecan halves
  • 1 banana, sliced
  • 1/4 cup lime juice
  • 1 lime, quartered, as garnish

Cut pineapple lengthwise into quarters. Cut away and discard core. Remove pineapple flesh by carefully cutting between it and outer skin of pineapple to use the shell for a salad bowl. Cut pineapple into chunks and combine with remaining ingredients, except lime wedges, in a bowl. Gently toss and chill if desired. Serve fruit salad in a pineapple shell topped with lime garnish.

Peanut Butter Pie
Prep: 10 min, plus freezing time.
  • 1 9 inch graham cracker pie crust
  • 4 cups vanilla ice cream
  • 1 cup peanut butter
  • 1/2 cup purchased fudge sauce, or chocolate syrup
  • 1/4 cup roasted peanuts, chopped

Place ice cream in refrigerator 45-50 minutes until softened. Gently swirl softened ice cream and peanut butter together in a bowl. Do not over mix. Transfer mixture to pie shell. Drizzle with fudge sauce and sprinkle with peanuts. Freeze and least 1 hour and serve frozen.
