Tostadas Grandes

  • 1 cup canned refried beans
  • 4 purchased corn tostada shells
  • 1 cup tomatoes, chopped
  • 1 avocado, peeled, pitted and sliced
  • 1 cup iceberg lettuce, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup salsa
  • 1/2 cup sour cream

Heat beans in a heavy saucepan 3-5 minutes over medium heat, stirring often until hot. Divide beans equally into tostada shells. Layer with next 4 ingredients. Top with a dollop of salsa and sour cream.

Sweet Banana Dollars
Prep: 15 min, plus freezing time.
  • 1 cup vanilla lowfat yogurt
  • 1/2 tsp. almond extract
  • 2 ripe bananas, peeled and cut into 1/4 inch rounds
  • 1/2 cup ground nuts, walnuts, pecans or almonds

Combine yogurt and extract in a bowl. Dip banana slices in yogurt mixture, then roll in nuts. Arrange on a pan in a single layer. Cover loosely and freeze 10 minutes before serving.
