Sheila's Brown Sugar Delights
Prep: 10 min, Cook: 45 min, plus cooling time.
  • 4 medium eggs
  • 1 lb. brown sugar
  • 1-1/2 cups pecans, chopped
  • 1-1/2 cups flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1 tsp. vanilla or almond extract
  • 1/4 cup powdered sugar (optional)

Combine eggs and brown sugar in the top of a double boiler. Cook over boiling water for 10 minutes. stirring occasionally. Add pecans and remove from heat. Sift together the flour, salt, and baking powder, then stir into the first mixture. Stir in the vanilla extract. Spread mixture into a well-greased 8x12 inch pan. Bake at 375°F for 30 to 35 minutes. Cool on rack before cutting and serving. If desired, sprinkle with powdered sugar.
