Maria's Gazpacho
Prep: 10 min, plus refrigeration time.
- 3 medium tomatoes, peeled and chopped
- 1/2 cup cucumber, seeded and chopped
- 1/2 cup green bell pepper, chopped
- 2 green onions, sliced
- 2 cups low sodium vegetable juice
- 1 clove garlic, crushed
- 1/4 tsp. hot red pepper sauce
- 1/2 tsp. dried basil
- 1 Tbs. lemon juice
Combine all ingredients in a large mixing bowl. Mix thoroughly. Cover and refrigerate for 3 to 5 hours.
