Stuffed Chayotes
Prep: 10 min, Cook: 1:30.
- 4 small chayotes, cut lengthwise in half
- 1 quart plus 1 cup water
- 2/3 cup low fat cheddar cheese
- 1/8 tsp. salt
- 2 tsp. margarine or butter
- 1/3 cup plain breadcrumbs
Wash chayotes and bring to a boil in water. Cover and boil at low to moderate heat for 60 minutes or until tender. Preheat oven to 350°F. Drain chayotes, remove seeds and fibrous area around seeds. Scoop out the flesh without braking the shells. Place shells on a cookie sheet. Mash the flesh and mix in the cheddar cheese, salt, and butter (or margarine). Stuff shells with this mixture. Sprinkle plain breadcrumbs over the top and bake for 30 minutes.
