Greek Country Salad

- 4 tomatoes, thinly sliced
- 4 small cucumbers, thinly sliced
- 2 small onions, thinly sliced
- 2 medium red or green bell peppers, sliced
- 12 olives
- 1/2 cup extra virgin olive oil
- 2 tsp. vinegar
- 2 cups chopped purslane, or other green lettuce
- 1/4 tsp. salt (optional)
