Baked Walleye
Prep: 15 min, Cook: 25 min.
  • 1-1/2 lbs. walleye fillets
  • 3 Tbs. melted butter
  • 2 Tbs. diced green onions
  • 1/2 tsp. dill
  • 2 Tbs. lemon juice
  • 1/4 tsp. salt
  • 3 Tbs. butter
  • 3-1/2 Tbs. flour
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1/3 cup milk

Preheat oven to 450°F. Spray a 9x13 inch baking dish with nonstick oil. Arrange fillets in the dish. Combine melted butter, green onion, lemon juice, dill, and salt and spread over fillets. Cover with foil and bake for 25 minutes, or until fish is firm and opaque. Drain the liquid from the fish into a small bowl. Cover fish with foil to keep warm.

Add water to the liquid until you have about 1-1/3 cups. Melt butter in a saucepan. Stir in flour, salt, and black pepper. Add to the liquid mixture. Add milk. Cook, stirring constantly until mixture thickens. Pour over fish and serve.
