Harry's Hawaiian Haupia
Prep: 5 min, Cook: 5 min, plus chilling time.
  • 1/4 cup plus 2 Tbs. cornstarch
  • 1/4 cup plus 2 Tbs. sugar
  • 1-1/4 cups water
  • 1-2/3 cups coconut milk

Mix cornstarch and sugar in a saucepan. Add water and stir to dissolve. Stir in coconut milk. Cook on medium heat for 3-4 minutes, or until mixture bubbles, stirring constantly. Reduce heat and cook until thickened, about 2 minutes. Pour into an 8x8 inch pan and chill until mixture sets.
