Rachel Sandwich

- 8 slices rye bread
- 1 Tbs. plus 1 tsp. unsalted butter
- 1 lb. thinly sliced pastrami, or sliced turkey
- 8 slices Swiss cheese
- 1 cup sauerkraut, or coleslaw
- 1/4 cup Russian dressing
Heat a griddle or nonstick skillet over medium heat until hot. Butter one side of each piece of bread. Layer each sandwich with remaining ingredients. Cook about 2 minutes per side, or until golden and cheese has melted.
