Ginger Tomato Dipping Sauce

- 7 ounces canned diced tomatoes, undrained
- 2 cloves garlic
- 2 Tbs. onions, chopped
- 1 Tbs. jalapeño pepper, chopped
- 1-1/2 tsp. ground ginger, or 1 Tbs. chopped ginger root
- 1/2 tsp. salt
- 1 tsp. vegetable oil
Process all ingredients, except oil, in food processor or blender until smooth. Sauté sauce in oil in heavy skillet until thickened, about 5 minutes.
