Veggie Balls
Prep: 15 min, Cook: 10 min.
  • 1 cup walnuts
  • 1 clove garlic, crushed
  • 1 onion, chopped
  • 1 Tbs. celery, chopped
  • 2 Tbs. parsley, chopped
  • 1 tsp. salt (optional)
  • 1/2 tsp. pepper
  • 1/3 cup seasoned breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup vegetable oil

Combine first 5 ingredients in a food processor or blender and chop finely. Add remaining ingredients, except oil. Process until smooth. Roll mixture into balls 2 inches in diameter. Heat 2 inches of oil to 325°F in a heavy skillet over medium-high heat. Fry balls, turning occasionally until deep brown.
