Tuna Burgers
Prep: 10 min, Cook: 10 min, plus chilling time.
  • 6 ounces canned tuna, drained and flaked
  • 1 cup breadcrumbs
  • 1 egg, slightly beaten
  • 1/2 cup celery, minced
  • 1/3 cup mayonnaise
  • 1/4 cup onion, minced
  • 1 tsp. lemon juice
  • 1 Tbs. oil
  • 4 lettuce leaves
  • 4 slices tomato
  • 4 whole wheat English muffins, split, toasted and buttered
  • 1/4 cup tartar sauce

Combine first 7 ingredients in a bowl until blended. Cover and chill 1 hour. Shape into 4 patties. Heat oil in a heavy nonstick skillet over medium heat. Add tuna patties and cook about 6 minutes per side, or until lightly browned. Place lettuce, tuna burger and tomato on each bottom muffin half. Top with remaining muffin halves. Serve with tartar sauce.
