Crawfish Casserole
Prep: 20 min, Cook: 30 min.
  • 3 cups crawfish meat, cooked
  • 2 cups cooked white rice
  • 1/2 cup sliced olives
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1/2 cup grated Parmesan or cheddar cheese
  • 1/4 cup flour
  • 2 cups milk
  • 3 Tbs. butter or margarine, melted
  • 1/8 tsp. salt
  • 1/8 tsp. ground black pepper

Combine first 6 ingredients and place in a well-greased 9x13 inch casserole pan. In a bowl, mix reamining ingredients. Pour over casserole. Bake at 350°F until top is brown, about 25 to 30 minutes.
