Lemony Breakfast Muffins
Prep: 5 min.
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, softened
  • 1-1/2 tsp. lemon peel, grated
  • 3 Tbs. lemon juice, at room temperature
  • 4 raisin English muffins, split and toasted

Combine sugar and butter in a bowl. Stir in lemon peel and juice until blended. Spread on each muffin half.
