Pork Loaf
Prep: 10 min, Cook: 1:20.
  • 1 cup fresh breadcrumbs
  • 1 cup buttermilk
  • 1 tsp. unsalted butter
  • 1 medium onion, minced
  • 1 small red or green bell pepper, chopped
  • 2 eggs
  • 1-1/2 lbs. lean ground pork
  • 1/2 lb. cooked ham, ground

Combine first 2 ingredients in a medium bowl. Let stand 10 minutes. Melt butter in a medium skillet over medium heat. Sauté onion and bell pepper about 4 minutes, stirring often, until vegetables are softened. Cool slightly before adding to buttermilk mixture. Stir in eggs, and salt and pepper to taste. Add ground pork and ham and mix well. Transfer to a 9x5 inch loaf pan. Bake about 1-1/4 hours or until a meat thermometer inserted in center of loaf reads 160°F. Let stand 5 minutes. Pour off excess fat and slice.
