Gallo Pinto
Prep: 10 min, Cook: 10 min.
  • 1 Tbs. virgin olive oil
  • 1/4 medium Vidalia or other sweet onion, chopped
  • 1/4 bunch cilantro, chopped
  • 2 cups canned black beans, drained and slighty mashed with a fork
  • 1-1/2 cups cooked rice
  • 2 Tbs. plus 2 tsp. salsa or picante sauce
  • dash of salt
  • dash of pepper

Add olive oil to a saucepan; sauté onion and cilantro 2-3 minutes, or until soft. Add remaining ingredients and cook on low heat, stirring occasionally, for 8-10 minutes. Serve hot.
