Peruvian Lomo Saltado

- 2 Tbs. olive or vegetable oil
- 1/2 cup onions, sliced
- 2 cloves garlic, crushed
- 1/2 cup red bell pepper, chopped
- 1-1/2 cups cooked potatoes, cubed
- 1/2 lb. boneless sirloin steak, thinly sliced
- 1 Tbs. jalapeño pepper, minced
- 1 tomato, finely chopped
- 1 tsp. fresh oregano
Heat oil in a saucepan over medium heat; sauté onion, garlic, and pepper for 3-5 minutes. Add cooked potatoes and heat, stirring, until potatoes begin to brown. Mix in remaining ingredients and sauté 7-10 minutes, or until steak is cooked as desired.
