Basic Baked Catfish

- 1 lb. catfish fillets
- 3 Tbs. lemon juice
- 1/4 cup evaporated skim milk
- 2/3 cup cornflake crumbs
- 2 tsp. cooking oil
Preheat oven to 450°F. Drizzle lemon juice on catfish fillets. Dip fillets in milk, then roll in crumbs. Place fillets in baking pan and drizzle with cooking oil. Bake for 10 minutes, or until fish flakes easily with a fork.
