KK's Lemon Yogurt Pound Cake
Prep: 10 min, Cook: 45 min.
  • 2 cups sugar
  • 1 cup shortening
  • 3 eggs
  • 2-1/4 cups flour
  • 1 cup lowfat lemon yogurt
  • 1/4 cup water
  • 1 tsp. lemon zest
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda

Preheat oven to 350°F. In a bowl, combine the sugar and shortening. Beat in eggs, then mix in remaining ingredients. Pour into greased and floured tube pans or 8x4 inch loaf pans. Bake for 45-55 minutes, or until a wooden toothpick inserted comes out clean. Cool before serving.
