Doreen's German Potato Salad
Prep: 15 min, Cook: 15 min.
  • 1 lb. whole potatoes, with skins
  • 2 thick cut cooked bacon, cut into tiny pieces
  • 1 onion, chopped
  • 1/4 cup vinegar
  • 3 Tbs. wine vinegar
  • 1 Tbs. parsley
  • 1 tsp. mustard
  • salt and pepper, to taste

Boil potatoes for about 15-20 minutes, or until cooked. Run under cold water to cool slightly. Peel and cut into thin slices. Meanwhile, sauté the bacon and onion for about 5 minutes, until bacon is cooked and onion is soft. Add remaining ingredients and the potato slices, mixing well. Serve warm.
