Homemade grenadine adds distinctive flavor and color to drinks, fruit mixtures, sauces, and desserts and makes a great gift during the holiday season. For a festive holiday aperitif, add 1 or 2 tablespoons to sparkling wine; drop a few fresh or frozen seeds to each glass.
In a small saucepan, combine pomegranate juice and sugar. Bring to a boil over high heat, stirring until the sugar is dissolved; boil for 1 minute. Remove from heat and cool. Cover and refrigerate up to 2 weeks. Freeze, in airtight containers, up to 3 months. Makes 1-1/4 cups. This recipe serves 16 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 16 only.
