Pomegranate, Orange, and Kiwi Salad

This colorful salad combines sweet seasonal fruit with spicy vinaigrette. Serve it with or without salad greens.

Prep: 10 min.
  • 1 Tbs. white wine vinegar
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper
  • 1/8 tsp. red pepper flakes
  • 2 Tbs. plus 2 tsp. olive oil
  • 1 cup mixed salad greens, optional
  • 1-1/4 oranges, peeled and sliced
  • 2-3/4 kiwi fruit, peeled and sliced
  • 3/4 medium pomegranate, seeded

To make dressing, combine vinegar and next three ingredients; whisk in oil. Toss greens with 1 Tbs. plus 2 tsp. dressing; arrange on a serving platter. Alternating, arrange orange slices and kiwi slices over greens. Drizzle with remaining dressing. Sprinkle with pomegranate seeds.
