Salmon Dill Muffins
Prep: 5 min, Cook: 5 min.
  • 10 ounces canned salmon, drained and flaked
  • 1/3 cup sour cream
  • 1/3 cup celery, chopped
  • 2 Tbs. plus 2 tsp. green onions, minced
  • 1 Tbs. plus 1 tsp. fresh dill, chopped
  • 2 tsp. lemon juice
  • 2 tsp. Dijon mustard
  • 4 English muffins, split, toasted and buttered

Prepare broiler. Combine all ingredients, except muffins, in a bowl. Top each muffin half with salmon mixture. Broil 6 inches from heat about 5 minutes, or until warm.
