Single Guy's Turkey and Egg Tortilla
Prep: 5 min, Cook: 5 min.
  • 4 thick turkey breast slices, precooked, cut into small pieces
  • 4 eggs
  • 4 flour tortillas
  • 1 Tbs. plus 1 tsp. butter

Place turkey pieces in a lightly greased frying pan. Cook over low heat until heated, turning as necessary. Crack eggs into the pan. Cook, turning once, for 2-3 minutes, or until done as desired. Meanwhile, place tortillas in a microwave and heat for 30 seconds, or until warm. Butter the tortillas. Add turkey and egg down the centers of each tortilla and fold in half. Serve.
