Chicken Tikka
Prep: 15 min, Marinate: 6:00, Cook: 5 min.
  • 1-1/2 lbs. boneless, skinless chicken breasts, cut into small cubes
  • 2/3 cup plain yogurt
  • 2 Tbs. vegetable oil
  • 2 Tbs. lime juice
  • 2 fresh garlic cloves, crushed
  • 2 tsp. freshly grated ginger root
  • 1 tsp. ground coriander
  • 3/4 tsp. ground chilli powder
  • salt and pepper, to taste
  • 4 skewers

Thread chicken onto skewers. Place in a dish. Mix remaining ingredients together in a bowl. Pour over chicken. Turn to coat. Cover and marinate in the fridge for at least 6 hours. Heat grill. Place skewered chicken on rack and cook 5-7 minutes, turning and basting occasionally with remaining marinade. Serve hot.
