Saag Panir (Indian Spinach Dish)

- 1 large onion, finely chopped
- 4 fresh garlic cloves, finely crushed
- 2 ounces freshly grated ginger root
- 1 lb. frozen spinach, thawed and drained
- 1 cup plain yogurt
- 1/2 cup buttermilk
- 2 tsp. garam masala, or other curry powder
- 1 tsp. ground red pepper
- 1 cup half and half
- 1/2 lb. panir, cut into cubes
Combine first 8 ingredients in a medium saucepan. Simmer for 20-25 minutes. Add the half and half. Simmer 10-15 more minutes, or until mixture has creamy consistency. Add the panir and simmer an additional 5 minutes. (If panir unavailable, substitute other fresh chunk-style cheese.)
