Iowa Gourmet Catfish
Prep: 10 min, Cook: 10 min.
  • 1 lb. catfish fillets
  • 2 Tbs. lemon juice
  • 1/4 cup evaporated milk
  • 1/2 cup cornflake crumbs
  • 2 tsp. olive oil
  • 2/3 cup plus 1 Tbs. canned crushed pineapple, drained
  • 1/2 cup apples, finely diced
  • 1/2 cup red bell pepper, finely diced
  • 2 Tbs. sugar
  • 2 Tbs. cider vinegar
  • 2 Tbs. minced onion flakes
  • 1/4 tsp. dry mustard

Preaheat oven to 450°F. Place catfish in baking pan. Sprinkle with lemon juice, dip in milk, roll in crumbs, and then drizzle over oil. Bake 8-10 minutes, or until fish flakes easily. Meanwhile, combine remaining ingredients in a small saucepan. Simmer for 5 minutes. Serve over fish.
