Krautburgers
Prep: 10 min, Cook: 20 min.
  • 2 slices of bacon, chopped
  • 3/4 onion, chopped
  • 3/4 Jonathan apple, cored and chopped
  • 5 ounces sauerkraut, rinsed and drained
  • 11 ounces kielbasa sausage
  • 4 whole wheat English muffins, split and toasted

Heat a heavy nonstick skillet over medium-high heat. Cook bacon 3 minutes. Add onion and apple and sauté 2 minutes. Reduce heat to low and stir in sauerkraut. Simmer 10 minutes, stirring frequently. Meanwhile, grill or broil kielbasa 6 inches from heat 10-12 minutes, turning occasionally, or until heated through. Diagonally cut sausage into 1/4 inch slices and arrange on one half of the muffins. Top with sauerkraut mixture and remaining muffin halves.
