Thai Pork Tofu
Prep: 15 min, Cook: 10 min.
- 5 ounces lean ground pork
- 2 tsp. hot red pepper sauce
- 3/4 tsp. soy sauce
- 3/4 tsp. sugar
- 1 Tbs. plus 1 tsp. peanut oil
- 1 Tbs. plus 1 tsp. freshly grated ginger root
- 1 Tbs. plus 1 tsp. minced garlic
- 1/4 tsp. salt
- 1/3 cup chicken stock
- 1-1/4 lbs. tofu, cut into small cubes
- 2 tsp. peppercorns, ground
- 3-1/2 Tbs. minced onion
- 1-1/4 tsp. cornstarch, mixed with a little water
- 2 tsp. sesame oil
Combine first 4 ingredients in a bowl. Heat wok over high heat, add next 4 ingredients, and stir fry for about 30-45 seconds, or until pungent. Add the pork mixture and stir fry for 1 minute. Add the chicken stock and cook for 4-5 minutes. Add tofu. Cook for 3-4 minutes. Add next 4 ingredients. Cook, stirring, until sauce begins to thicken. Serve over rice if desired.
