Mini Meat Loaves
Prep: 10 min, Cook: 30 min.
  • 1-1/2 lbs. lean ground beef
  • 2 eggs, beaten
  • 2 small onions, finely chopped
  • 2 cups fresh breadcrumbs
  • 2 Tbs. grated Parmesan or Romano cheese
  • 2 Tbs. fresh parsley, finely chopped
  • salt and pepper, to taste

Preheat oven or toaster oven to 350°F. Combine all ingredients in a bowl, mixing well. Spoon equally into a 6-cup muffin pan. Bake for 25-30 minutes, or until thoroughly cooked.
