Turkey Club English Muffin Rarebit
Prep: 5 min, Cook: 5 min.
  • 2 Tbs. cornstarch
  • 1/2 tsp. dry mustard
  • 1/8 tsp. crushed red pepper
  • 1-1/2 cups milk
  • 2 tsp. Worcestershire sauce
  • 2 Tbs. unsalted butter
  • 2 cups shredded cheddar cheese
  • 4 English muffins, split and toasted
  • 1 lb. cooked turkey, sliced
  • 4 slices of cooked bacon
  • 2 medium tomatoes, sliced

Combine cornstarch, dry mustard and red pepper in a saucepan. Gradually stir in milk and Worcestershire sauce until smooth. Add butter. Stirring constantly, bring to a boil over medium heat and boil 1 minute. Stir in cheese until melted and smooth. Top each muffin half with turkey, bacon, tomato slices and cheese sauce.
