Toaster Oven Catfish Fillets

- 20 golden round crackers, crushed
- 1/2 cup grated Parmesan or cheddar cheese
- 1/3 cup fresh parsley sprigs, minced
- 1/4 cup melted butter or margarine
- 4 catfish fillets
Mix first 3 ingredients in a bowl. Brush butter on fillets; coat each fillet with the cracker mixture. Place on foil-lined baking tray. Bake at 400°F for 15-20 minutes, or until fish flakes easily with a fork.
