Garden-Fresh Sandwich Spread

  • 1/3 cup fat-free French dressing
  • 3/4 cup low fat cheddar cheese
  • 1/2 cup coarsely chopped unpeeled cucumber
  • 1/2 cup coarsely chopped carrots
  • 1-1/2 Tbs. chopped fresh parsley, or 3/4 tsp. dried parsley flakes

In a blender container, combine French dressing, cheddar cheese, cucumber, carrots, and parsley. Cover and process on Blend for 60 seconds, or until vegetables are chopped and blended. Use as a sandwich filling or spread on crackers. One serving is about 1/3 cup.
