Thai Spicy Peanut Sauce

- 2 garlic cloves
- 1/2 cup smooth peanut butter
- 2 Tbs. sugar
- 2 Tbs. water
- 1/4 tsp. Vietnamese garlic-chili paste, or to taste
- 1-1/2 tsp. fresh lemon juice
- 1-1/2 tsp. soy sauce
Chop garlic in a small food processor and add remaining ingredients. Process until smooth. Cover and refrigerate up to 3-5 days. Use as a dipping sauce or over rice.
