Lemon Ice
Prep: 10 min, Cook: 5 min, plus freezing time.
  • 1 lemon peel, from small lemon, cut into small pieces
  • 1 cup sugar
  • 4 cups water
  • 1/8 tsp. salt
  • 2/3 cup lemon juice

Cut lemon peel and sugar in a blender or food processor. Process until finely chopped. Place mixture into a large pan. Add water and salt. Heat until sugar dissolves. After it has cooled, add lemon juice and stir. Freeze. To serve, process in a blender/food processor until it is slush. Makes 4 1/2 cups.
