Old West Pork
Prep: 10 min, Cook: 1:40.
  • 2 tsp. vegetable oil
  • 4 boneless pork sirloin chops
  • 3/4 large onion, sliced thickly
  • 2 Tbs. chili powder
  • 3/4 green bell pepper, seeded and chopped
  • 2/3 cup long grain white rice, uncooked
  • 2/3 cup tomato sauce
  • 1 cup water

Preheat oven to 350°F. Heat oil in a flame-proof casserole dish over medium high heat. Cook pork 2 minutes per side until browned. Remove from casserole and set aside. Cook onion slices 1 minute per side. Set aside. Add chili powder to casserole and cook 1 minute, stirring. Stir in remaining ingedients and salt and pepper to taste. Arrange pork over rice mixture. Place an onion slice over each pork chop. Cover and bake 45 minutes.
