Ocean Perch Fillets with Orange-Mustard Glaze
Prep: 5 min, Cook: 10 min.
  • 1/3 cup orange juice
  • 3 Tbs. coarse grain mustard
  • 1-1/2 tsp. brown sugar
  • 1 lb. perch fillets
  • nonstick cooking spray

Bring first 3 ingredients to a boil in a heavy non-reactive saucepan over medium heat. Boil 1 minute, stirring occasionally. Coat a broiler pan with nonstick cooking spray. Place fillets, skin side down, on the pan and brush with mustard mixture. Broil 4 inch from heat source 4-6 minutes, or until fish flakes easily.
