Mixed Driscoll's Berries with Red Wine-Citrus Granite

Call it granite if you prefer a French name; granita if Italian is your choice. By any name it’s an incredibly easy, and impressive dessert.

  • 1 lb. Driscoll's strawberries
  • 1 lb. Driscoll's raspberries
  • 6 ounces Driscoll's blueberries
  • 3/4 cup water
  • 1/2 cup sugar
  • 3 sprigs fresh thyme
  • 1/4 cup fresh orange juice
  • 3 Tbs. fresh lime juice
  • 3 Tbs. fresh lemon juice
  • 1-1/4 cups Burgundy-type dry red wine
  • 4 sprigs fresh mint, or thyme, for garnish

In a small saucepan combine water, sugar and thyme sprigs. Over medium-low heat simmer, uncovered, stirring occasionally until sugar dissolves, about 3 to 4 minutes. Stir in the red wine and citrus juices, then pick out and discard thyme springs, leaving any loose leaves in the wine mixture.

Pour the liquid into an 8x8 inch by 2 inch or 9x9 inch or 7x11 inch metal pan.* Freeze the mixture until ice crystals begin to form at edges. Stir to distribute ice crystals, then continue to freeze and stir, about every 30 to 40 minutes until very icy, about 2 hours. (Note: mixture will not freeze completely because of alcohol in wine.) Cover surface with plastic wrap and keep in freezer until ready to serve.

Prepare all berries by rinsing and drying on paper towels. Hull strawberries and halve or quarter. In mixing or serving bowl, combine all the berries. Remove granite from freezer and stir with fork or spoon until small chunks or slushy. Divide the berries among chilled glasses or serving dishes and spoon the granite over the berries. Garnish with thyme or mint and serve immediately.

*The mixture can be put into a large zip top freezer bag. Instead of stirring, just squeeze the bag a few times to distribute the ice crystals. Squeeze again just before serving.
