Driscoll's Strawberry Shortcake

Amazing take on a popular favorite!

Prep: 15 min, Cook: 25 min.
  • 2 cups flour
  • 1 Tbs. baking powder
  • 1/2 tsp. salt
  • 3/4 cup sugar
  • 1 egg
  • 3 Tbs. margarine, melted
  • 1 cup milk
  • 4 cups ice cream
  • 1/2 cup whipped cream, optional
  • 4 cups Driscoll's strawberries, hulled
  • 1/4 cup sugar

Preheat oven to 350°F. Prepare an 8x8 inch pan with nonstick cooking spray. In a large bowl, sift together flour, baking powder, salt and sugar. Add egg, margarine, and milk; mix well. Bake 25-30 minutes or until light brown. Remove from oven; cool.

To make sauce, in a large bowl, mix together strawberries and sugar. Let stand 30 minutes or until sugar is dissolved.

To serve, cut shortcake into pieces; add ice cream. Spoon strawberry sauce over ice cream. Garnish with whipped cream or topping.
