Vegetable Stuffed Zucchini
Prep: 15 min, Cook: 45 min.
  • 4 large zucchini
  • 2 Tbs. olive oil
  • 1/2 cup onions, chopped
  • 1 Tbs. garlic, chopped
  • 1/2 lb. Italian sausage
  • 1-1/2 cups Eat Smart® vegetables, any blend cut into bite size pieces
  • 1 cup prepared couscous
  • 1-1/2 cups marinara sauce, or vodka marinara sauce
  • 1 cup Asiago, Parmesan or Romano cheese, shredded

Cut zucchini in half-length wise. With a spoon, scoop out zucchini pulp; chop finely.

In a large fry pan, heat oil. Add onions and garlic cooking until softened. Add Italian sausage breaking into bite size pieces. Add vegetable medley, chopped zucchini pulp cooking until vegetables are softened. Add couscous and marinara sauce, mixing well.

Divide filling between zucchini halves. Sprinkle cheese on each zucchini half. Bake at 350°F for 45 minutes.
