3 Veggie Quiche
Prep: 10 min, Cook: 50 min.
- 2 Tbs. Dijon mustard
- 1 package pastry for 9-inch single pie crust
- 3 cups Eat Smart® vegetables, (any blend)
- 1 cup lowfat Swiss cheese, shredded
- 1/3 cup green onions, chopped
- 2 eggs
- 1 cup lowfat milk
- 1/8 tsp. salt
- 1/8 tsp. black pepper
Spread Dijon mustard on bottom and sides of crust. Bake in preheated oven according to package directions for 10-minutes. Remove from oven. Place vegetables, cheese and green onions into pie crust, mixing well. In a small bowl, combine eggs and milk. Pour over top of vegetable mixture. Bake in preheated 400°F oven for 35 to 40 minutes until center is set and top is browned.
Let stand 20 minutes before cutting.
