Baked Turkey Fillets
Prep: 15 min, Marinate: 40 min, Cook: 20 min.
  • 4 turkey fillets, about 6 ounces each
  • 2 cloves garlic, crushed
  • 1 green bell pepper, cored, seeded and chopped
  • 1 piece fresh ginger root, 1 inch long, minced, optional
  • 1 tsp. scallions, minced
  • 2 tsp. olive oil
  • 4 slices whole wheat bread, toasted

Preheat oven to 375°F. Season turkey fillets with salt and pepper to taste and set aside. Combine remaining ingredients, except bread, in a food processor or blender and blend until smooth. Coat turkey filets with green pepper paste. Set aside 40 minutes. Arrange turkey in lightly oiled baking dish. Bake 25-30 minutes, or until turkey is cooked throughout. Serve on toasted bread.
