Baked Grouper or Red Snapper Fillets
Prep: 15 min, Cook: 10 min, plus refrigeration time.
  • 4 grouper or red snapper fillets, about 6 ounces each
  • 2 cloves garlic, crushed
  • 1 green bell pepper, cored, seeded and chopped
  • 1 1 inch piece fresh ginger, minced
  • 1 tsp. scallions, minced
  • 1 Tbs. plus 1 tsp. olive oil

Season grouper fillets with salt and pepper to taste and set aside. Combine remaining ingredients in a food processor or blender and blend until smooth. Coat grouper fillets with green pepper paste. Refrigerate 40 minutes. Preheat oven to 375°F. Bake 10-12 minutes, or until fish flakes easily.
