Turkey Sandwich with Cranberry-Orange Relish

  • 1/4 cup plus 2 Tbs. purchased cranberry orange relish, or homemade
  • 1/4 cup celery, finely chopped
  • 2 Tbs. plus 2 tsp. fat-free mayonnaise
  • 8 slices cinnamon raisin bread, toasted
  • 12 slices cooked turkey breast

Combine relish and celery in a bowl. Stir well and set aside. Spread a portion of mayonnaise over each bread slice. Divide turkey between half the bread slices. Spoon cranberry mixture over turkey and top with remaining bread.
