Smoked Trout Pate
Prep: 15 min.
  • 10 ounces whole smoked trout, or other smoked fish, skinned and boned
  • 1/4 lb. whipped cream cheese
  • 2 Tbs. fat-free mayonnaise type salad dressing
  • 1-1/2 Tbs. lemon juice
  • 1/8 tsp. ground black pepper
  • 1 Tbs. scallions, minced
  • cracker
  • slice cucumber

Blend trout and next 5 ingredients in a food processor until smooth. Transfer trout mixture to a bowl. Cover and refrigerate if not serving right away. Allow refrigerated pâté to stand at room temperature 15 minutes to soften before serving. Serve with crackers and cucumber slices.
