Fruit Compote with Ice Cream
Prep: 15 min, plus chilling time.
- 2 cups strawberries, hulled
- 2 Tbs. water
- 1/2 tsp. vanilla extract
- 1/2 lb. pineapple chunks, drained and chopped
- 1/2 lb. peaches, peeled and sliced
- 4 cups chocolate ice cream
- 1/2 cup caramel topping
Purée strawberries, water and vanilla in a blender. Combine with pineapple and peaches in a bowl and chill. Serve over ice cream drizzled with caramel topping.
